And this Eclipse rum, named after the 1910 total solar eclipse visible over Barbados, is the embodiment of the Mount Gay style. Distilled in a traditional column and double retort still and aged for two years in charred American whiskey casks, it’s light- to medium-bodied with distinctive aromas of vanilla and banana, with underlying notes of caramel, summer fruit,and spice.
